60g butter, softened

1/2 cup caster sugar

1 teaspoon vanilla extract

2 egg whites

1/3 cup plain flour

Pinch of salt

1 cup NESTLÉ BAKERS' CHOICE Dark Choc Melts
Method

1Preheat oven to 180°C/160°C fan-forced. Using an 8cm-round cutter as a guide, trace 4 circles onto a sheet of baking paper. Turn baking paper over and place on a greased baking tray.

2Using an electric mixer, beat butter, sugar and vanilla on medium speed until light and fluffy. Beat in egg whites, one at a time, until combined. Reduce speed to low. Add flour and salt. Beat until just combined.

3Spoon 2 level teaspoons of mixture at a time onto each circle. Using the back of a spoon, spread the mixture to fill circles.

4Bake for 6 to 7 minutes or until cookies are golden brown around the edges. Working quickly, with one cookie at a time, place 1 paper message on 1 half of cookie. Fold cookie in half to enclose, pressing the edge together. Carefully bend in half to form a crescent shape. Place on the rim of a glass to cool.

5Repeat steps 3 and 4 with remaining batter to make 24 fortune cookies.

6Place chocolate melts in a heatproof microwave-safe bowl. Microwave on MEDIUM (50%) for 1 to 2 minutes or until smooth, stirring with a metal spoon halfway through. Dip half the cookie into melted chocolate, holding over bowl to allow excess chocolate to drain. Transfer to a baking tray lined with baking paper. Set aside for 20 minutes to set.
