Chicken pasta bake

  • 60g butter
  • 1/4 cup plain flour
  • 2 1/2 cups milk
  • 300g cooked rigatoni pasta
  • 2 cups barbecued chicken, shredded
  • 1 1/2 cups frozen mixed vegetables (peas, corns, carrots)
  • 1 cup tasty cheese, grated
  • 1 tablespoon parsley, chopped
  • Salad, to serve

    Preheat oven to moderate, 180C. Melt butter in a small saucepan over medium heat.

    Stir in flour and cook, stirring, for 1 minute. Remove from heat and whisk in milk until smooth. Return to heat and cook, stirring, until sauce boils and thickens. Reduce heat and simmer for 3 minutes.

    Stir in 1/2 cup cheese until melted and combined. Remove from heat and stir in rigatoni, chicken, vegetables and season to taste.

    Pour into a 2-litre ovenproof dish. Sprinkle with 1/2 cup tasty cheese and parsley. Bake for 20-25 minutes until golden. Serve with salad.
