
Ingredients

2L chicken broth, chicken meat reserved (see related recipe)

60ml (1/4 cup) soy sauce

5cm-piece fresh ginger, peeled, thinly sliced

1 lemongrass stem, halved lengthways

180g soba noodles

1 bunch baby pak choy, halved lengthways

100g snow peas, halved diagonally

1 tablespoon lime juice

Thinly sliced fresh red chilli, to serve
Method

1Bring chicken broth to boil in a large stockpot over high heat. Add soy sauce, ginger and lemongrass. Reduce heat to medium. Simmer for 5 minutes.

2Add noodles. Cook for 4 minutes, adding the pak choy, snow peas and reserved chicken meat in the last 2 minutes of cooking. Stir in lime juice. Serve with chilli.
