Cherry Eton mess

Ingredients

  • 300ml thickened cream
  • 2 teaspoons icing sugar mixture
  • 1 teaspoon vanilla extract
  • 100g petite vanilla meringues, crushed
  • 1 cup drained pitted morello cherries, halved (see note)

Method

    Using an electric mixer, beat cream, sugar and vanilla until soft peaks form. Fold in meringue and three-quarters of the cherries.

    Spoon into serving glasses. Top with remaining cherries. Serve.
