Ingredients

2 slices wholemeal bread with grains, crusts removed

Olive oil cooking spray

2 chicken breast schnitzels (uncrumbed)

1/3 cup grated reduced-fat tasty cheese

1/2 teaspoon pizza topper seasoning

2 tablespoons panko breadcrumbs
Tomato sauce

2 teaspoons extra virgin olive oil

1/2 small brown onion, finely chopped
-
1 small celery stalk, finely chopped
-
1/2 small carrot, finely diced
-
1 small garlic clove, crushed
-
410g can crushed tomatoes

1/2 teaspoon caster sugar

Method

1Preheat oven to 220C/200C fan-forced. Line 2 baking trays with baking paper.

2Place bread slices on a flat surface. Using a rolling pin, flatten slightly. Cut each bread slice into 4 triangles. Transfer to 1 prepared tray. Lightly spray with oil. Bake, turning halfway through, for 5 minutes or until golden and toasted. Transfer to a wire rack to cool.

3Place chicken on a chopping board. Press with the palm of your hand to flatten slightly. Sprinkle evenly with cheese and 1/2 the pizza seasoning. Starting from 1 short end, roll up chicken to enclose filling. Secure each with 2 toothpicks. Place on remaining prepared tray. Spray chicken with oil. Sprinkle with breadcrumbs and remaining pizza seasoning. Spray with oil. Bake for 15 to 20 minutes or until golden and cooked through. Set aside to cool.

4Meanwhile, make Tomato Sauce: Heat oil in a frying pan over medium-high heat. Add onion, celery and carrot. Cook for 10 minutes or until softened. Add garlic. Cook for 1 minute or until fragrant. Add tomatoes, sugar and 1/3 cup of water. Bring to the boil. Reduce heat to medium-ow. Simmer for 6 to 8 minutes or until slightly thickened. Allow to cool. Transfer to 2 x 1-cup-capacity airtight containers. Cover with lids. Refrigerate until required.

5Cut each piece of chicken into 4 slices. Refrigerate until required. Place in bento box with tomato sauce and toasted bread.
