Cheesy bread dippers

  • 6 slices white bread
  • 2 tablespoons pesto
  • 120g (1 1/2 cup) coarsely grated cheddar cheese
  • 2 tablespoons chopped fresh continental parsley, plus extra to serve
  • 40g butter
  • Tomato soup, to serve

    Trim crusts from the bread and discard. Use a rolling pin to flatten the bread slices. Spread evenly with pesto. Sprinkle with the cheese. Roll up tightly to enclose.

    Melt the butter in a frying pan over low heat until foamy. Add the dippers, seam side down. Cook, gently turning, until crisp and golden brown.

    Sprinkle with parsley and serve with soup.
