Cheat's paella

Ingredients

  • 1 tablespoon Coles Brand pure olive oil
  • 1 red onion, halved thinly sliced
  • 250g primo chorizo, sliced
  • 450g pkt microwave basmati rice
  • 200g Coles seafood frozen cooked & peeled prawns, thawed
  • 2 cups shredded barbecued chicken
  • 1 cup frozen peas
  • 2 tomatoes, chopped
  • 1/4 cup parsley, chopped

Method

  • 1
    Heat oil in a frying pan, or paella pan, on medium. Cook onion for 5 mins, or until softened. Add chorizo and cook for 2 mins each side, or until browned. Stir through rice, prawns, chicken and peas. Cook for 3-4 mins, stirring, until peas are tender.

    Stir through tomato and parsley.
