Ingredients

1 tablespoon Coles Brand pure olive oil

1 red onion, halved thinly sliced

250g primo chorizo, sliced

450g pkt microwave basmati rice

200g Coles seafood frozen cooked & peeled prawns, thawed

2 cups shredded barbecued chicken

1 cup frozen peas

2 tomatoes, chopped

1/4 cup parsley, chopped
Method

1Heat oil in a frying pan, or paella pan, on medium. Cook onion for 5 mins, or until softened. Add chorizo and cook for 2 mins each side, or until browned. Stir through rice, prawns, chicken and peas. Cook for 3-4 mins, stirring, until peas are tender.

2Stir through tomato and parsley.
