Ingredients

1.5kg small chat potatoes, halved

4 green onions, thinly sliced

1 cup sour cream

1 1/2 tablespoons wholegrain mustard

1 tablespoon lemon juice

1/4 cup chopped fresh flat-leaf parsley leaves
Method

1Place potatoes in a large saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium. Cook for 10 to 12 minutes or until just tender. Drain. Set aside for 15 minutes to cool.

2Meanwhile, combine onion, sour cream, mustard, lemon juice and parsley in a jug. Place potato in a bowl. Add onion mixture. Season with salt and pepper. Toss to combine. Serve.
