Ingredients

400g macaroni

1 small cauliflower, cut into florets

200g shaved ham, chopped

1 1/2 cups frozen peas

1 1/2 cups Coles Brand shredded tasty cheese

250g Coles Brand lite sour cream

1 cup panko breadcrumbs

2 tablespoons Coles Brand pure olive oil

100g baby spinach

1/2 red onion, thinly sliced

1 tablespoon Coles Brand australian extra virgin olive oil
Method

1Cook macaroni in a large pan of boiling salted water, according to packet directions, adding cauliflower for the final 5 mins of cooking time. Drain, reserving 1 cup of cooking liquid.

2Return macaroni and cauliflower to pan. Add ham, peas, 3/4 cup cheese, sour cream and reserved cooking liquid. Toss to combine. Season. Divide evenly between 6 ovenproof dishes. Combine breadcrumbs and remaining cheese. Scatter over macaroni mixture. Drizzle with olive oil.

3Cook under a preheated grill for 5 mins, or until golden and bubbling. Toss together spinach, onion and extra virgin olive oil. Serve macaroni with salad.
