Cashew crumble pears

  • 1/4 cup (45g) Natures Selection cashews
  • 30g unsalted butter, chilled, cubed
  • 1/4 cup (40g) self-raising flour
  • 2 tablespoons brown sugar
  • 4 ripe beurre bosc pears, halved, cored
  • 1/4 cup (60ml) maple syrup
  • Vanilla ice cream, to serve

    Preheat oven to 180°C. Place the cashews on a baking tray and roast for 5 minutes or until golden. Chop then set aside.

    Use your fingertips to rub butter into the flour. Stir in the sugar.

    Brush the pears with the maple syrup. Cook in a frying pan over a medium heat for 1-2 minutes or until lightly golden. Transfer to a baking dish cut side up.

    Top the pears with the crumble mixture. Scatter over the cashews. Bake for 10 minutes. Serve with any remaining maple syrup and vanilla ice cream.
