Bubble and squeak patties with avocado bacon salad

  • Alfa One rice bran oil cooking spray
  • 750g packet frozen rustic cut garlic lemon thyme and sea salt potatoes
  • 2 cups (280g) frozen sweet potato cubes
  • 1 cup (150g) frozen corn kernels
  • 2 eggs, lightly beaten
  • 3/4 cup dried breadcrumbs

    Preheat oven to 220°C/200°C fan-forced. Spray a baking tray with oil. Cook potato following packet directions. Cook sweet potato and corn following packet directions. Transfer vegetables to a bowl. Cool slightly. Roughly mash. Cool for 10 minutes.

    Stir half the egg into vegetables. Shape mixture into 8 patties. Combine remaining egg and 1 tablespoon cold water in a bowl. Place breadcrumbs in a bowl. Coat patties in egg mixture then breadcrumbs.

    Place patties on prepared baking tray. Spray with oil. Bake for 20 minutes, turning, or until browned. Serve with avocado bacon salad (see related recipe).
