Ingredients

2 teaspoons olive oil

3 short-cut bacon rashers, halved lengthways, thinly sliced

2 avocados, seeds removed

2 baby cos lettuce leaves, halved, shredded

1 small red onion, finely chopped

2 tomatoes, finely chopped

1/4 cup (60ml) lime juice

2 tablespoons fresh coriander, chopped

8 slices Coles Bakery Pane di Casa bread, chargrilled
Method

1Heat oil in a medium frying pan over high heat. Cook bacon, stirring occasionally, for 4 mins or until golden and crisp. Drain on paper towel.

2Roughly mash avocado in a medium bowl. Reserve one-quarter of the lettuce, onion, tomato and bacon. Stir lime juice, coriander and remaining lettuce, onion, tomato and bacon into the avocado. Season.

3Top guacamole with reserved lettuce, onion, tomato and bacon. Serve with bread.
