Ingredients

6 large slices white bread, toasted

1/2 avocado, mashed

4 short-cut rindless bacon rashers, cooked

4 baby cos lettuce leaves, trimmed, sliced

6 cherry tomatoes, thinly sliced
Method

1Spread 1 side of each slice of toast with butter. Spread avocado over 4 slices. Top 2 avocado slices with bacon. Place remaining 2 avocado slices, avocado-side down, on bacon. Top with lettuce and tomato. Top with remaining toast slices, butter-side down.

2Cut each sandwich into 4 triangles. Insert a cocktail skewer into each triangle. Serve.
