Ingredients

1 cup plain flour

60g butter or margarine

1 cup Bircher Muesli

2 to 3 tablespoons orange juice
Custard

1 cup milk

2 tablespoons honey
-
1 tablespoon custard powder
Topping

200g dried fruit medley or mixed dried fruit

2 tablespoons apricot jam (optional)
Method

1Combine flour and butter in a food processor. Add muesli and sufficient orange juice to make a soft dough.

2Roll pastry out on a lightly-floured board until about 3mm thick. Using a scone cutter, cut out circles and ease into greased patty tins. Prick the base of each pastry case with a fork. Rest in the fridge for 15 minutes.

3Bake in a hot oven (200°C) for 20 minutes or until golden. Remove from tin. Allow to cool.

4Prepare custard: Combine milk, honey and custard powder in a small saucepan until smooth.

5Bring to the boil, stirring constantly, until thickened. Simmer for 3 minutes. Remove from heat and cover with plastic wrap. When cool, spoon into pastry cases.

6Prepare topping: Sprinkle tartlets with dried fruit medley. Heat jam. Spoon or brush a little over each tartlet. Store in an airtight container.
