Ingredients

250g beetroot, peeled, coarsely grated

2 cups milk, plus extra to serve

2 pink lady apples

1 1/4 cups traditional rolled oats

Pinch of salt

1/2 teaspoon mixed spice

1/4 cup maple syrup, plus extra to serve (optional)

1 tablespoon pepitas, toasted

60g fresh blueberries
Method

1Place beetroot, milk and 1 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, for 5 to 7 minutes or until beetroot is tender.

2Meanwhile, coarsely grate 1 apple.

3Stir oats, salt, mixed spice and maple syrup into beetroot mixture. Cook over medium-low heat for 5 minutes or until oats have softened and thickened. Stir in grated apple.

4Core remaining apple and cut in half. Cut into thin slices. Divide porridge among serving bowls. Top with apple, pepitas and blueberries. Drizzle with extra maple syrup, if using. Serve with extra milk.
