Beef and mushroom bolognese

  • 375g spaghetti or other pasta
  • 1 tablespoon olive oil
  • 500g beef mince
  • 150g button mushrooms, finely chopped
  • 575g jar tomato pasta sauce

    Heat oil in a medium frying pan on high. Brown mince for 4-5 minutes, breaking up any lumps with the back of a spoon as it cooks.

    Add mushrooms and cook, stirring for another 4-5 minutes, until mushrooms are tender.

    Stir in sauce and bring to the boil. Reduce heat to low and simmer for 5-10 minutes.

    Meanwhile, cook pasta in a large saucepan of boiling, salted water for 10-12 minutes following packet instructions. Drain well.

    Serve pasta topped with bolognese. Sprinkle with a little shaved parmesan and chopped parsley, if you like.
