Ingredients

700g Steggles chicken breast fillets, cut into 3cm pieces

1 cup buttermilk

1 cup cornflake crumbs

1 teaspoon mild paprika

1 teaspoon garlic salt

1/2 teaspoon dried mixed herbs

1/2 teaspoon cracked black pepper

Olive oil cooking spray

Barbecue sauce, to serve
Method

1Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper.

2Place chicken in a large glass or ceramic bowl. Add buttermilk. Toss to coat.

3Combine cornflake crumbs, paprika, garlic salt, herbs and pepper in a bowl. Remove 1 piece of chicken from buttermilk, shaking off excess. Coat chicken in crumb mixture. Place on prepared tray. Repeat with remaining chicken and crumb mixture. Spray chicken with oil.

4Bake for 15 to 20 minutes, turning halfway, or until golden and cooked through. Serve with barbecue sauce.
