5-ingredient Mexican rice salad

Ingredients

  • 2 x 250g packets microwave Mexican rice
  • 400g packet Coles Mexican salad kit
  • 1 avocado, sliced
  • 250g cherry tomatoes, halved
  • Fresh coriander leaves, to serve

Method

    Cook rice following packet directions. Cool 10 minutes.
  • 2
    Combine rice, salad mix, avocado and tomato in a large bowl. Sprinkle with cheese (from salad kit) and drizzle with dressing (from salad kit). Serve sprinkled with coriander.
